If you want to make a roast chicken easy, without too many ingredients, this recipe is the basis for any other preparation.

– Ingredients –

  • 1 whole chicken cleaned
  • Butter with salt

  • Sprigs of rosemary and basil or fine herbs dehydrated

– Mode of preparation –

  • 1 chicken

  • 100g of margarine
  • 3 bay leaves

  1. ROAST CHICKEN WITH PINEAPPLE

The roast chicken combines very well with flavors of bittersweet. In this recipe, the combination is with orange and pineapple.

– Ingredients –

  • 1 whole chicken cleaned
  • 4 pineapple slices cut in half
  • 1 cup of freshly squeezed orange
  • 1/2 cup of cebolinhos and salsa picadinhos
  • 1/2 cup of white wine
  • 1 medium onion, chopped
  • 2 garlic cloves, crushed
  • Salt and pepper
  • Butter for greasing

  • 1 small beer

– Mode of preparation –

  1. Cover the chicken with water and a few lemon slices, a few hours before.
  2. For the filling, place in the Thermomix the onion, garlic, olive oil and the sausage.
  3. Chop 15 sec., reg. 5, and program 7 min., reg. 1, temp. 100°C.
  4. Add the kids chicken cut into pieces, bacon, diced, carrots and peas, mushrooms and spices to taste.
  5. Program 5 min., reg. 1, temp. 100°C.
  6. Add the pickles cut in small pieces and a bit of flour, needed to get a filling consistent, that do not drain after.
  7. To program 1 min., reg. 1, temp. 100°C, up to connect.
  8. After you put the stuffing inside the chicken, and bake so that the filling does not fall out.
  9. Prepare a spreadable paste to the chicken, with a mass of bell pepper, pasta, garlic, flower of salt (or coarse salt), lard, pepper and nutmeg.
  10. Mix all the ingredients together and lightly coat the chicken on both sides, putting already on the pyrex dish where it will bake. On top put a few slices of lemon.
  11. Drizzle with a little olive oil and wrap in transparent film. Place in the fridge until the next day.
  12. Before placing in the oven drizzle with half of a small beer, after the middle of cooking put the rest of the beer. The time of cooking will depend on the size of the chicken. But it will be about 1 hour to 1 hour and a half.
  13. When halfway through cooking, turn the chicken over and make a few cuts, so that cook well on the inside. Drizzle with the remaining beer and bring it back to the oven.
  14. Remove, drizzle with lemon juice and trinche for all to enjoy.
